INGREDIENTS:

  1. 1 cucumber
  2. 1 tsp sea salt flakes
  3. 1 garlic clove, crushed
  4. 1 tsp granulated sugar
  5. 2 tbsp rice vinegar
  6. 1/4 tsp ground black pepper
  7. 1 tbsp soy sauce
  8. 2 tablespoons of Screaming Chimp Pineapple chilli sauce
  9. 250g of cooked large prawns

METHOD:

  • Slice the cucumber length ways
  • Scoop out the seeds with a spoon
  • Place the cucumber on a board and place a flat metal implement, such as a spatula, on top. Using the palm of your hand, smack until the cucumber splits and breaks.
  • Chop into bite-sized pieces and transfer to a bowl. Add the salt, toss and set aside for 30 minutes.
  • Rinse and drain the cucumber
  • Mix the other ingredients
  • Add to the cucumber and enjoy
  • I served mine with steamed sticky rice
